BLOG – GIFT DAY 245 :: how do you zucchini?

You could call this adventures in zucchini. Or See Jamie Bake.
We have literally placed two boxes full of zucchini on our front sidewalk this week to help share the bounty of our garden. And to lighten our load. 

But we still have mounds of zucchini.

To help wade through our zucchini harvest I have started baking.
First step: you need to buy a zucchini grade grater.

After acquiring a grater I woke up early the next day to bake in the kitchen before the sun decided to bake our little house and make it unbearable to turn on the oven in close to 100 degree heat.

6:30AM, let the baking begin.

Second step, grate, measure and stir. Simple enough.
Except I didn’t realize that when you BAKE with stevia it is recommended that you use 1/2 sugar and 1/2 stevia. I didn’t have sugar…. but what harm could it cause, really?

The recipe came out beautiful!
Chocolate Zucchini Cake.

But then I realized I forgot the icing. What’s a cake without icing?
So I found a recipe online, how to turn chocolate chips into icing.

And it worked!

All was well! And delicious!
Until I bit into the third bite and realized the cake wasn’t cooked all the way through.

Nothing is more disappointing than sitting in your hot kitchen realizing that your little labor of love is a FLOP. Or, at least completely raw in the middle.

The good news….
I have TONS of zucchini sitting on my counter.
