BLOG – GIFT DAY 256 :: secrets of abundance and the $200 mark

The garden continues to grow. 
Despite the fact that we haven’t really given it much love since my adventure in surgery.  But, this week we officially reached the $200 mark in garden harvested veggies.

Even without our tender loving care this is our latest harvest.

Guess what?

But we also have eggplants, tomatoes and a green pepper.
So today I made attempt #2 at Zucchini Bread.

And this time it turned out fantastic!

The secret ingredient was sugar. Stevia didn’t bake well last time, left my bread loaf looking flat and tasted, well… awful. It was immediatley fabulously stale.

Today’s loaf plumped up great and tastes even better. So relieved. Not that there isn’t more zucchini as backup, but still, I hate wasting it.

Speaking of not wasting food…
Today I discovered another secret. 

The freezer!

I don’t know why I didn’t think of this sooner. I saved the grated zukes in marked freezer bags and noted the amount (1 cup up to 3 cups) so I can pull the size of bag I need based on recipe.

(Duh, what took me so long!)
Now we will have zukes through the winter.

Planting, growing and harvesting a garden has helped me understand the flow of nature — including the importance of planning ahead.

And in this year of discovering ABUNDANCE that is one of the secret ingredients.
